Moringa / Beef Quckie Meal

I like simple meals and sometimes I just throw things together. This came out delicious. To answer your question, we are not vegetarian. Meat is eaten in our family sparingly. Red meat less often than chicken and fish.  If you are vegetarian, substitute the meat for Tofu. 

3 cups washed Moringa leaves
1 cup cooked  organic ground beef (this should work with cut up chicken too)
1 cup water
1 cup stewed tomatoes
1/2 cup green peppers
2 T. Olive oil
1 tsp. minced garlic or more
salt to flavor
dash of pepper
1 sliced red or brown onion

Saute garlic, onion, peppers, and tomatoes in a frying pan. Add ground beef.  Drain excess oil.  Add water then simmer for a few minutes over low heat. Season with salt and pepper. Add Moringa leaves the last 5 minutes. Serve over rice or pasta.
This is easy, quick and inexpensive to make. 

Serve with a salad topped with more Moringa leaves.
